Crust Preparation

    Prepare Graham Cracker Crust

    In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated in butter and the mixture resembles wet sand.

    Form the Crust

    Press the mixture into the bottom of a 9-inch springform pan, ensuring it is evenly distributed and packed tightly. Use the bottom of a flat measuring cup to help press it down.

    Bake the Crust

    Preheat the oven to 350°F (175°C). Bake the crust for 8-10 minutes until it is lightly golden. Remove from the oven and let it cool while you prepare the filling.

Filling Preparation

    Beat Cream Cheese

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

    Add Sugar and Sour Cream

    Add the granulated sugar and sour cream to the cream cheese. Beat on low speed until well combined, scraping down the sides of the bowl as needed.

    Incorporate Vanilla and Eggs

    Add the vanilla extract and eggs, one at a time, mixing on low speed until just combined. Do not overmix.

    Pour Filling into Crust

    Pour the cheesecake filling into the prepared crust, smoothing the top with a spatula.

    Bake the Cheesecake

    Bake in the preheated oven for 50-60 minutes or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake in the oven with the door ajar for 1 hour.

    Cool and Refrigerate

    Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, cover and refrigerate for at least 4 hours or overnight.

Topping Preparation

    Prepare Fresh Fruit Topping

    Wash and dry the fresh fruit. If using strawberries, hull and slice them.

    Mix with Powdered Sugar

    In a small bowl, toss the fruit with powdered sugar until evenly coated. Let it sit for about 10 minutes to release some juices.

    Serve

    Once the cheesecake is fully chilled, remove it from the springform pan and top with the prepared fruit mixture just before serving.
