Ravioli Dough

    Prepare the Dough

    In a large bowl, combine the flour and salt. Make a well in the center and crack the eggs into the well.

    Mix the Dough

    Using a fork, gradually incorporate the flour into the eggs until a dough begins to form. Knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

Sweet Pea Filling

    Prepare the Filling

    If using frozen peas, thaw them in a bowl of warm water. In a food processor, combine the sweet peas, ricotta, Parmesan, lemon zest, salt, and pepper. Blend until smooth.

    Fill the Ravioli

    Roll out the dough into thin sheets. Place small spoonfuls of the pea filling on one sheet, with space in between. Moisten the edges with water, cover with another sheet of dough, and press to seal.

    Make the Sauce

    In a food processor, combine garlic scapes, basil, olive oil, Parmesan, salt, and pepper. Blend until smooth. Adjust seasoning to taste.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for 3-5 minutes until they float to the top. Drain and toss gently with the garlic-scape sauce.
