Cook the Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the cresti di gallo pasta and cook according to package instructions until al dente, approximately 8-10 minutes.

    Drain the Pasta

    Once cooked, drain the pasta and set aside, reserving about 1 cup of the pasta water.

Prepare the Shrimp

    Sauté the Shrimp

    In a large skillet, heat olive oil over medium-high heat. Add the shrimp and sauté for about 3-4 minutes until they turn pink and opaque.

    Add Scallions and Season

    Add the chopped scallions and red pepper flakes to the skillet. Season with salt and black pepper to taste. Cook for an additional 2 minutes until the scallions are tender.

    Incorporate Tomatoes

    Stir in the diced tomatoes and cook for another 3-5 minutes until the tomatoes soften and release their juices.

Combine and Serve

    Toss Pasta with Shrimp Mixture

    Add the cooked pasta to the skillet with the shrimp and tomato mixture. Toss everything together, adding reserved pasta water a little at a time if needed to achieve a desired consistency.

    Serve Hot

    Serve the Shrimp with the Heat immediately, garnished with additional scallions if desired.
