Roasted Turkey Meatloaf

Chive Mashed Potatoes

Method

Roasted Turkey Meatloaf

  1. 1

    Preheat Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Prepare the Mixture

In a large bowl, combine ground turkey, breadcrumbs, egg, milk, chopped onion, minced garlic, chopped parsley, salt, black pepper, and paprika. Mix until just combined.

  3. 3

    Shape the Meatloaf

Transfer the mixture to a loaf pan and shape it into a loaf.

  4. 4

    Bake the Meatloaf

Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C).

Turkish Fig Gravy

  1. 5

    Sauté the Aromatics

In a saucepan, heat olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent.

  2. 6

    Add Figs and Broth

Stir in the chopped dried figs and chicken broth. Bring to a simmer.

  3. 7

    Finish the Gravy

Add balsamic vinegar, salt, and black pepper. Simmer for about 10 minutes until the figs soften and the gravy thickens slightly.

Chive Mashed Potatoes

  1. 8

    Boil the Potatoes

In a large pot, add the peeled and cubed potatoes and cover with water. Bring to a boil and cook until fork-tender, about 15-20 minutes.

  2. 9

    Mash the Potatoes

Drain the potatoes and return to the pot. Add butter, milk, chopped chives, salt, and black pepper. Mash until smooth and creamy.
