    Roast the Tomatoes

    Preheat your oven to 400°F (200°C). Slice the Roma tomatoes in half and place them cut-side up on a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt and pepper.

    Add Garlic

    Add minced garlic over the tomatoes. Roast in the oven for 25-30 minutes, or until the tomatoes are soft and caramelized.

    Blend the Soup

    Once roasted, transfer the tomatoes and garlic to a blender. Add the vegetable broth and chopped basil. Blend until smooth. Adjust seasoning with additional salt and pepper, if needed.

    Heat the Soup

    Transfer the blended mixture to a pot over medium heat. Cook for about 10 minutes, stirring occasionally, until heated through.

    Sauté the Mushrooms

    In a skillet over medium heat, add 1 tablespoon of butter. Once melted, add the sliced portobello mushrooms and sauté for about 5-7 minutes until they are tender. Stir in the chopped thyme and remove from heat.

    Assemble the Sandwich

    Spread the remaining butter on one side of each slice of rye bread. On the unbuttered side, layer sautéed mushrooms and sprinkle with shredded Fontina cheese.

    Grill the Sandwich

    Heat a skillet over medium heat. Place the sandwich butter-side down in the skillet. Grill for 3-4 minutes until golden brown, then flip and grill the other side until the cheese is melted and the bread is crispy.

    Serve

    Remove the sandwich from the skillet, slice in half, and serve with a bowl of hot roasted tomato soup.
