Chive Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the potatoes into uniform pieces. Place them in a pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth.

    Add Chives

    Chop the fresh chives and fold them into the mashed potatoes. Keep warm until ready to serve.

Fish and Mushrooms

    Sear the Cod

    Heat olive oil in a large skillet over medium-high heat. Season the cod fillets with salt and black pepper. Once the oil is hot, add the cod fillets and sear for approximately 4-5 minutes on each side or until golden brown and cooked through.

    Cook the Mushrooms

    In the same skillet, add the oyster mushrooms and sauté for about 4-5 minutes until they are tender and golden. Season lightly with salt and pepper.

Ginger Sauce

    Prepare the Ginger Sauce

    Finely grate the fresh ginger and chop the scallions. In a small bowl, combine grated ginger, soy sauce, and sesame oil. Mix well.

Assembly

    Plate the Dish

    On each plate, place a generous scoop of chive mashed potatoes, topped with sautéed oyster mushrooms. Lay the seared cod on top and drizzle the ginger sauce over the fish. Garnish with additional chopped scallions if desired.
