Fried Potatoes Preparation

    Cook the Potatoes

    In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and season with salt and black pepper. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden brown and tender.

    Add Garlic

    During the last 2 minutes of cooking, add the minced garlic to the skillet with the potatoes. Stir well and cook until fragrant.

Omelet Preparation

    Sauté the Mushrooms

    In a separate skillet, melt 1 tablespoon of butter over medium heat. Add the wild mushrooms, season with salt and pepper, and sauté for about 5-7 minutes or until they are tender and golden brown.

    Prepare the Omelet Mixture

    In a bowl, whisk together the farm eggs, salt, and pepper until well combined.

    Cook the Omelet

    In the skillet with the mushrooms, push the mushrooms to one side and add the remaining tablespoon of butter to the empty side. Pour the egg mixture into the skillet, tilting the pan to spread it evenly. Cook for about 2-3 minutes until the edges start to set.

    Add Cheese and Finish

    Sprinkle the sautéed mushrooms and shredded Fontina cheese over one half of the omelet. Carefully fold the other half over the filling and cook for an additional minute until the cheese is melted and the eggs are fully cooked.

    Serve the Dish

    Once the omelet is cooked, slide it onto a plate and serve hot alongside the fried potatoes.
