Preparation of Granola

    Preheat Oven

    Preheat your oven to 300°F (150°C).

    Mix Dry Ingredients

    In a large mixing bowl, combine the chopped almonds, pumpkin seeds, ground flaxseeds, shredded coconut, cinnamon, nutmeg, salt, and erythritol. Stir well to ensure all the dry ingredients are evenly mixed.

    Combine Wet Ingredients

    In a separate bowl, whisk together the melted coconut oil, vanilla extract, and pumpkin puree until smooth.

    Combine Wet and Dry Ingredients

    Pour the wet mixture into the bowl with the dry ingredients. Stir thoroughly until all the dry ingredients are well coated with the wet mixture.

    Spread on Baking Sheet

    Line a baking sheet with parchment paper and spread the granola mixture evenly on it, pressing down gently.

    Bake in the preheated oven for 25-30 minutes or until golden brown. Stir halfway through to ensure even baking.

    Once baked, remove from the oven and let it cool completely on the baking sheet. The granola will harden as it cools.

    Once fully cooled, break the granola into clusters and store in an airtight container.
