Prepare the Pork Tenderloin

Preheat the Grill
Preheat your grill to medium-high heat (about 400°F/200°C).

Season the Pork
Rub the pork tenderloin with olive oil, salt, and black pepper evenly.

Grill the Pork
Place the seasoned pork tenderloin on the grill and cook for about 20-25 minutes, turning occasionally until it reaches an internal temperature of 145°F (63°C).

Rest the Pork
Remove the pork from the grill and let it rest for 5-10 minutes before slicing.
Make the Vegetable Purée

Prepare the Vegetables
Peel and chop the celery root and carrot into small pieces.

Prepare the Brandy Green Peppercorn Sauce

Sauté the Peppercorns
In a skillet, melt 1 tablespoon of butter over medium heat. Add green peppercorns and sauté for 1-2 minutes.

Add Brandy
Carefully add the brandy to the skillet and let it simmer for about 3-5 minutes until reduced by half.

Finish the Sauce
Stir in the heavy cream, and season with salt and black pepper to taste. Allow the sauce to simmer for an additional 3-5 minutes until thickened.
