    Prepare the Sausage

    In a skillet over medium heat, add 1 tbs of olive oil. Once hot, add the house-made sausage and cook until browned and cooked through, about 4-5 minutes. Remove from the skillet and set aside.

    Cook the Eggs

    In the same skillet, crack the eggs and season with salt and pepper. Cook until the whites are set but the yolks are still slightly runny, about 2-3 minutes. Place the American cheese and fontina cheese on top of the eggs and cover the skillet to melt the cheese, about 1 minute.

    Assemble the Sandwich

    Slice the croissant in half. On the bottom half, layer the cooked sausage, followed by the cheesy eggs. Top with the other half of the croissant. Serve immediately.

Fried Potatoes

    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into small cubes, about 1-inch in size.

    Fry the Potatoes

    In the same skillet, add 2 tbs of olive oil and heat over medium-high heat. Add the cubed potatoes and season with salt, black pepper, and paprika. Fry until golden brown and crispy, about 10-12 minutes, stirring occasionally.

    Serve the Potatoes

    Once cooked, remove from heat and serve alongside the breakfast sandwich.
