Cooking Instructions

  1. 1

    Prepare the Vegetables

In a large pot, heat olive oil over medium heat. Add the chopped onions, celery, and carrots. Sauté for about 5 minutes until the vegetables are softened.

  2. 2

    Add Garlic and Corn

Stir in the minced garlic and fresh corn kernels. Cook for an additional 3 minutes until the corn is fragrant.

  3. 3

    Add Potatoes and Broth

Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.

  4. 4

    Blend the Chowder

Using an immersion blender, blend the chowder until smooth. Alternatively, transfer to a blender in batches and blend until smooth.

  5. 5

    Stir in Cream and Season

Return the blended chowder to the pot if using a blender. Stir in the heavy cream, salt, and black pepper. Heat through for another 5 minutes.

  6. 6

    Garnish and Serve

Serve the corn chowder hot, garnished with fresh parsley.
