Prepare the Ingredients
Gather all the ingredients and prepare them for assembly. Slice the mozzarella cheese if not pre-sliced.

Assemble the Panini
Spread 1 tablespoon of nut-free pesto on one side of each slice of sourdough bread. On two slices, layer the sundried tomatoes, mozzarella cheese, and fresh spinach. Close the sandwiches with the other slices of bread, pesto side down.

Toast the Panini
Heat a Panini press or skillet over medium heat. Brush the outside of the sandwiches with olive oil. Place the sandwiches in the press or skillet and cook until golden brown and the cheese has melted, about 3-5 minutes per side.

Serve
Remove the Panini from the heat, drizzle with balsamic glaze, slice in half, and serve warm.
