Instructions
- 1
Soak the Soybeans
Rinse the soybeans under cold water and place them in a bowl. Cover with 3 cups of water and let them soak overnight or for at least 8 hours.
- 2
Drain and Rinse
After soaking, drain the soybeans and rinse them thoroughly under cold water.
- 3
Blend the Soybeans
In a blender, combine the soaked soybeans with 4 cups of fresh water. Blend on high until the mixture is smooth and creamy.
- 4
Strain the Mixture
Place a cheesecloth or nut milk bag over a large bowl. Pour the blended soybean mixture into the cloth or bag and strain, squeezing out as much liquid as possible. The liquid collected is soy milk, and the remaining pulp (okara) can be saved for other recipes.
- 5
Flavor (Optional)
If desired, sweeten the soy milk with your preferred sweetener and add vanilla extract to taste. Stir well to combine.
- 6
Store
Transfer the soy milk to an airtight container and refrigerate. It can be stored for up to a week.
