Prepare the Melon Puree
In a blender, combine the cubed honeydew melon and simple syrup. Blend until smooth. Strain the mixture through a fine-mesh sieve into a bowl to remove any pulp.
Mix the Drink
In a large pitcher, combine the honeydew puree, fresh lemon juice, and melon liqueur. Stir until well mixed.
Serve
Fill glasses with ice cubes, then pour the honeydew mixture over the ice. Top each glass with sparkling water. Stir gently to combine.
Garnish
Garnish each drink with fresh mint leaves before serving.
