Prepare the Vegetables
Wash the fresh spinach thoroughly and set aside. Slice the zucchini into thin rounds. Chop the roasted red peppers into bite-sized pieces. Clean and slice the mushrooms. Dice the red onion.

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced red onion and sauté until translucent, about 3 minutes. Then add the sliced zucchini, mushrooms, and sauté for an additional 5 minutes until softened.

Add Spinach and Peppers
Stir in the fresh spinach and roasted red peppers. Cook until the spinach is wilted, about 2-3 minutes. Season with salt and pepper to taste.

Serve
Remove from heat and serve warm as a side dish or over cooked grains for a healthy meal.
