Preparation of Ingredients

    Prepare the Carrots

    Peel and slice the carrots into thin sticks. Set aside for roasting.

    Make the Salsa Verde

    In a bowl, combine chopped parsley, basil, minced garlic, capers, olive oil, lemon juice, salt, and pepper to taste. Mix well and set aside.

    Prepare the Almond Romesco

    In a food processor, combine blanched almonds, roasted red bell pepper, roasted garlic, smoked paprika, olive oil, and red wine vinegar. Blend until smooth and season with salt to taste.

Cooking the Salmon

    Preheat the Grill

    Preheat your wood-fired grill to medium-high heat.

    Roast the Carrots

    Place the carrot sticks on a grill-safe tray, drizzle with olive oil, and season with salt and pepper. Roast on the grill for about 15-20 minutes until tender and slightly charred.

    Cook the Salmon

    Season the Scottish salmon fillets with salt and pepper. Place the fillets directly on the grill grates. Cook for about 6-8 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

    On a serving platter, arrange the grilled salmon fillets, roasted carrots, and a generous dollop of salsa verde. Drizzle almond romesco on the side for dipping.
