Prepare the Potatoes

Wash and peel the potatoes. Cut them into wedges and set aside.

Prepare the Sausage

Remove the sausage from the casing and break into chunks.

Mince the Garlic

Peel and finely chop the garlic cloves.

Chop the Rosemary

Finely chop the fresh rosemary leaves.

Sear the Pork Chops

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the pork chops with salt and black pepper. Add the pork chops to the skillet and sear for about 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.

Cook the Sausage

In the same skillet, add the remaining tablespoon of olive oil and the sausage chunks. Cook until browned and cooked through, about 5-7 minutes. Remove and set aside with the pork chops.

Sauté the Potatoes

Add the potato wedges to the skillet and cook for about 10 minutes, stirring occasionally until they begin to soften.

Add Garlic and Rosemary

Add minced garlic and chopped rosemary to the skillet with the potatoes. Cook for another 2-3 minutes until fragrant.

Combine and Finish Cooking

Return the pork chops and sausage to the skillet. Add the hot vinegar peppers and stir everything together. Cover and cook on low heat for an additional 10-15 minutes until the pork chops are cooked through and the potatoes are tender.
