Bolognese Sauce

    Prepare the Bolognese Sauce

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion, diced carrot, and diced celery. Sauté for about 5 minutes until the vegetables are softened.

    Brown the Meat

    Add the ground beef and pork sausage to the skillet. Cook until browned, breaking it apart with a spoon, about 8-10 minutes.

    Add Garlic and Tomato Paste

    Stir in the minced garlic and tomato paste, cooking for 2 minutes until fragrant.

    Add Tomatoes and Wine

    Pour in the crushed tomatoes and red wine. Stir well and add oregano, salt, and pepper. Bring to a simmer, reduce heat, and let it cook for 30 minutes.

Marinara Sauce

    Prepare the Marinara Sauce

    In a separate saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

    Add Crushed Tomatoes

    Add the crushed tomatoes, basil, salt, and pepper. Simmer for 15-20 minutes, stirring occasionally.

Ricotta Mixture

    Combine Ricotta Ingredients

    In a medium bowl, mix together the ricotta cheese, egg, grated Parmesan cheese, salt, pepper, and parsley until well combined.

Lasagna Assembly

    Prepare Lasagna Layers

    Preheat your wood-fired oven to 450°F (232°C). Spread a layer of Bolognese sauce on the bottom of a large baking dish. Place 4 lasagna noodles on top.

    Layer the Ricotta and Mozzarella

    Spread half of the ricotta mixture over the noodles, followed by a layer of mozzarella cheese. Repeat the layering process with Bolognese sauce, noodles, ricotta, and mozzarella, finishing with a layer of marinara sauce and the remaining mozzarella on top.

    Bake the Lasagna

    Cover the lasagna with aluminum foil and place in the wood-fired oven. Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

    Let it Rest

    Remove the lasagna from the oven and let it rest for at least 10 minutes before slicing and serving.
