Method

Cauliflower Preparation

  1. 1

    Preheat Oven

Preheat your wood-fired oven to 500°F (260°C). If you don't have a wood-fired oven, a grill can also work.

  2. 2

    Prepare Cauliflower

Remove the leaves from the cauliflower and trim the stem, ensuring the head is intact.

  3. 3

    Season Cauliflower

Drizzle olive oil over the cauliflower head and sprinkle with salt and black pepper, ensuring even coverage.

  4. 4

    Wrap Cauliflower

Wrap the seasoned cauliflower in aluminum foil securely.

Goddess Dressing Preparation

  1. 5

    Blend Ingredients

In a blender or food processor, combine tahini, water, lemon juice, garlic, chopped parsley, and salt.

  2. 6

    Adjust Consistency

Blend until smooth and creamy, adjusting the water to reach your desired consistency.

Chili Crisp Preparation

  1. 7

    Mix Chili Crisp

In a small bowl, combine chili oil, crispy garlic, fried shallots, and red pepper flakes. Stir until well mixed.

Cooking and Serving

  1. 8

    Cook Cauliflower

Place the wrapped cauliflower in the preheated wood-fired oven or on the grill for 30-40 minutes.

  2. 9

    Unwrap and Cool

Once cooked, carefully unwrap the cauliflower and allow it to cool slightly before cutting into wedges.

  3. 10

    Serve

Serve the cauliflower wedges drizzled with goddess dressing and topped with chili crisp.
