    If using fresh tortellini, skip to cooking. If using dried tortellini, ensure to cook according to package instructions until al dente.

    In a mixing bowl, combine the ground veal, grated Parmesan cheese, salt, black pepper, and nutmeg. Mix thoroughly until well combined.

    Fill Tortellini

    Take a small piece of the tortellini dough, place a teaspoon of the filling in the center, fold over, and seal the edges tightly to form a tortellini shape. Repeat until all filling is used.

    In a medium saucepan, melt the butter over medium heat. Continue cooking until it turns golden brown and has a nutty aroma. Add the sage leaves and cook for an additional minute.

    Carefully pour in the chicken broth and bring to a simmer. Allow to cook for about 5-7 minutes to let flavors meld.
