Method

Steak Preparation

  1. 1

    Season the Steak

Sprinkle the flat iron steaks with salt and black pepper on both sides. Let them sit at room temperature for about 30 minutes.

  2. 2

    Cook the Steak

Heat olive oil in a skillet over medium-high heat. Once hot, add the steaks and cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest.

Garlic Butter Preparation

  1. 3

    Make Garlic Butter

In a small saucepan, melt the unsalted butter over low heat. Add minced garlic cloves and cook for 1-2 minutes until fragrant but not browned. Stir in chopped parsley and remove from heat.

Fries Preparation

  1. 4

    Prepare the Potatoes

Peel and cut the russet potatoes into thin strips to make fries. Soak in cold water for 30 minutes to remove excess starch.

  2. 5

    Bake the Fries

Preheat the oven to 425°F (220°C). Drain and pat the potatoes dry. Toss with olive oil and salt, then spread in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway, until golden and crispy.

Garnishing

  1. 6

    Garnish the Dish

Once the steak is rested, slice it against the grain. Serve with a side of fries, drizzle with garlic butter, and garnish with fresh watercress and shaved Parmesan cheese.
