Method

Preparing the Garlic Butter

    Make the Garlic Butter

    In a small saucepan over low heat, melt 4 tablespoons of unsalted butter. Add 3 minced garlic cloves and 2 tablespoons of chopped fresh parsley, stirring until fragrant (about 2-3 minutes). Remove from heat and set aside.

Cooking the Steak

    Season and Cook the Steak

    Season the flat iron steak on both sides with 1 teaspoon of salt and 1 teaspoon of black pepper. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Once the oil is hot, add the steak and cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest for 5 minutes before slicing.

Cooking the Eggs

    Fry the Eggs

    In the same skillet, reduce the heat to medium and add 1 tablespoon of butter. Once melted, crack 4 large eggs into the skillet, cooking until the whites are set but the yolks are still runny, about 3-4 minutes. If preferred, flip the eggs for over-easy.

Plating

    Assemble the Dish

    On a plate, place a serving of sliced steak, top with a drizzle of garlic butter, and arrange the fried eggs alongside. Garnish with 1 cup of watercress and sprinkle 0.5 cup of shaved Parmesan cheese over the top.
