Slice Capicollo
Thinly slice the capicollo into even pieces about 1/8 inch thick.

Mix Dry Ingredients
In a small bowl, combine the red pepper flakes, garlic powder, fennel seeds, and salt. Mix well.
Marinating

Combine Ingredients
In a large bowl, add the sliced capicollo and sprinkle the dry spice mixture over it.

Add Liquids
Drizzle the olive oil and white vinegar over the capicollo. Toss everything together until the capicollo is well coated in the spice mixture and liquids.

Marinate
Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or overnight for best flavor.
Serving

Plate and Serve
Once marinated, remove the capicollo from the refrigerator and serve it on a platter. It can be enjoyed on its own or as part of a charcuterie board.
