Polenta Preparation

Prepare the Polenta
In a large saucepan, bring 4 cups of water to a boil. Add 1 tsp of salt.

Add Polenta
Once the water is boiling, gradually whisk in 1 cup of polenta to prevent lumps.

Cook the Polenta
Reduce the heat to low and cook the polenta, stirring frequently, for about 20-25 minutes until thickened.

Finish the Polenta
Stir in 0.5 cup of grated parmesan cheese and 2 tbs of butter until melted and well combined. Keep warm.
Shrimp Mixture Preparation

Sauté the Garlic
In a large skillet, heat 2 tbs of olive oil over medium heat. Add 3 minced garlic cloves and sauté for about 1 minute until fragrant.

Add the Shrimp
Add the 1 lb of shrimp to the skillet and cook for 2-3 minutes until they start to turn pink.

Incorporate Capicola
Add 4 oz of thinly sliced capicola and 1 tsp of red chili flakes to the shrimp. Stir and cook for another 2 minutes.

Finish with Lemon
Remove from heat and squeeze the juice of 1 lemon over the shrimp mixture. Season with black pepper to taste.
Serving

Plate the Dish
Spoon the creamy polenta onto plates and top with the shrimp mixture. Serve immediately and enjoy!
