    Prepare the Potatoes

    Wash and dice the red potatoes into small cubes. Place them in a pot, cover with water, and bring to a boil. Cook for about 10 minutes or until tender but firm. Drain and set aside.

    Cook the Sausage

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage links and cook until browned on all sides, about 8-10 minutes. Remove the sausage from the skillet and slice them into bite-sized pieces.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and chopped bell peppers. Sauté for about 5 minutes until the peppers are tender.

    Add the drained potatoes and sliced sausage back into the skillet with the sautéed peppers and garlic. Stir in paprika, salt, and black pepper. Cook for another 5-7 minutes, stirring occasionally until everything is heated through and well combined.

    Poach the Eggs

    While the hash is cooking, bring a small pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide them into the simmering water. Poach the eggs for about 3-4 minutes or until the whites are set and the yolks are still runny.

    Divide the sausage and potato hash among four plates. Top each serving with a poached egg and sprinkle with chopped fresh parsley for garnish. Serve immediately.
