Shape the Croquettes
Take a small amount of the potato mixture and shape it into a small cylinder or ball. Repeat until all the mixture is used.

Coat the Croquettes
Place the breadcrumbs in a shallow dish. Roll each shaped croquette in the breadcrumbs to coat thoroughly.

Fry the Croquettes
In a large frying pan, heat the vegetable oil over medium heat. Once hot, fry the croquettes in batches until golden brown and crispy, about 3-4 minutes on each side. Remove and drain on paper towels.

Make the Jam
Add the chopped onion to the skillet and sauté until soft, about 5 minutes. Stir in the minced garlic and cook for another minute. Add the brown sugar, apple cider vinegar, maple syrup, and black pepper. Cook for about 10-15 minutes until the mixture thickens slightly.

Combine with Bacon
Crumble the cooked bacon into the jam mixture and stir to combine. Cook for an additional 2-3 minutes, then remove from heat.

Prepare the Burrata
In a small bowl, drizzle the burrata with olive oil and sprinkle with salt. Top with chopped fresh basil.
Assembling the Dish

Plate the Croquettes
On a serving plate, arrange the fried potato croquettes. Spoon generous amounts of bacon jam on top of each croquette.

Top each croquette with the prepared burrata and serve immediately while hot.
