    Prepare the Potatoes

    Peel and cut the potatoes into 1-inch cubes. Rinse them under cold water and set aside.

    Prepare the Garlic

    Mince the garlic cloves and set aside.

    Slice the Sausage

    Cut the Italian sausage into bite-sized pieces.

Cooking

    Sear the Pork Chops

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the pork chops with salt and black pepper. Add the pork chops to the skillet and sear for about 4-5 minutes on each side, or until golden brown. Remove from the skillet and set aside.

    Cook the Sausage

    In the same skillet, add the remaining tablespoon of olive oil. Add the sausage pieces and cook until browned, about 5-7 minutes. Remove and set aside with the pork chops.

    Sauté Garlic and Potatoes

    In the same skillet, add minced garlic and cook for 1 minute. Then, add the cubed potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften.

    Combine Ingredients

    Return the pork chops and sausage to the skillet with the potatoes. Add hot vinegar peppers, chicken broth, and fresh rosemary. Stir to combine.

    Simmer

    Cover and reduce heat to low. Let it simmer for about 20-25 minutes, or until the pork chops are cooked through and the potatoes are tender.
