Peppers Confit

Method

Peppers Confit

  1. 1

    Prepare the Peppers

Wash and seed the bell peppers. Cut them into strips or bite-sized pieces.

  2. 2

    Cook the Peppers

In a large skillet, heat the olive oil over medium heat. Add the garlic cloves (whole) and sauté for about 2 minutes until fragrant.

  3. 3

    Add Peppers and Seasoning

Add the cut bell peppers to the skillet. Stir in red pepper flakes, salt, and black pepper. Cook on low heat for about 30-40 minutes, stirring occasionally, until the peppers are soft and caramelized.

  4. 4

    Finish with Fresh Basil

Once the peppers are cooked, stir in the fresh basil. Remove from heat and let cool slightly before serving.

Garlic Toast

  1. 5

    Prepare the Bread

Preheat your oven to 375°F (190°C). Slice the baguette or Italian bread in half lengthwise.

  2. 6

    Make Garlic Butter

In a small bowl, mix the softened butter with garlic powder until well combined.

  3. 7

    Toast the Bread

Spread the garlic butter mixture evenly on the cut sides of the bread. Place the bread on a baking sheet and bake in the preheated oven for about 10-12 minutes until golden and crispy.

  4. 8

    Add Parmesan

Remove the bread from the oven and sprinkle the top with freshly grated Parmesan cheese. Return to the oven for an additional 2-3 minutes until the cheese is melted.
