Method

Cooking the Pastina

  1. 1

    Boil Water

In a large pot, bring 4 cups of water to a boil over high heat.

  2. 2

    Add Salt

Once the water is boiling, add 1 teaspoon of salt to the water.

  3. 3

    Cook Pastina

Add 1 cup of pastina to the boiling water. Stir occasionally to prevent sticking. Cook for about 5-7 minutes or until the pastina is al dente.

  4. 4

    Drain Pastina

Once cooked, drain the pastina in a colander and return it to the pot.

Finishing the Dish

  1. 5

    Add Butter

While the pastina is still hot, add 2 tablespoons of unsalted butter to the pot. Stir until the butter is melted and evenly coats the pastina.

  2. 6

    Add Parmesan

Sprinkle 1 cup of grated Parmesan cheese over the pastina. Stir well to combine, allowing the cheese to melt and create a creamy texture.

  3. 7

    Serve

Taste and adjust seasoning if necessary. Serve hot, garnished with additional Parmesan if desired.
