Method

Cooking the Pasta

    Boil Water

    In a large pot, bring 4-5 liters of water to a boil. Add 1 tablespoon of salt to the water.

    Cook Pasta

    Once the water is boiling, add 200 grams of pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, drain the pasta in a colander but reserve about 1 cup of the pasta cooking water.

Preparing the Sauce

    Heat the Olive Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Sauté Garlic

    Add 2 minced garlic cloves to the skillet and sauté for about 1 minute until fragrant.

    Add Tomatoes and Chili Flakes

    Add 400 grams of diced tomatoes and 1 teaspoon of red chili flakes to the skillet. Cook for about 5-7 minutes until the tomatoes break down and create a sauce.

    Combine Pasta and Sauce

    Add the drained pasta to the skillet with the sauce. Toss to combine and add a bit of the reserved pasta water if the sauce is too thick.

    Add Basil and Cheese

    Stir in 30 grams of chopped fresh basil and 50 grams of grated Parmesan cheese. Mix well until the cheese is melted.

Serving

    Plate the Pasta

    Serve the pasta in bowls, garnishing with additional Parmesan cheese and fresh basil if desired.
