Yogurt Preparation

    Heat the Milk

    In a medium saucepan, heat the milk over medium heat until it reaches about 180°F (82°C). Stir occasionally to prevent the milk from scorching.

    Cool the Milk

    Remove the saucepan from the heat and allow the milk to cool to about 110°F (43°C). You can speed up the cooling by placing the saucepan in a cold water bath.

    Add Yogurt Starter

    Once the milk has cooled, whisk in the plain yogurt, sugar, and vanilla extract until well combined.

    Ferment the Yogurt

    Transfer the mixture to a clean glass jar or container. Cover it with a lid or a clean cloth. Place it in a warm spot (around 110°F/43°C) to ferment for 6-12 hours, or until it reaches your desired tartness.

    Refrigerate

    After fermentation, stir the yogurt and transfer it to the refrigerator to chill for at least 2 hours before serving.

    Prepare the Fruit

    While the yogurt is chilling, wash and prepare your seasonal fruits. Hull and slice the strawberries, wash the blueberries, and peel and dice the peaches.

    Assemble the Yogurt Bowl

    Once the yogurt is chilled, scoop some yogurt into a bowl. Top it with a mix of the prepared seasonal fruits.

    Drizzle with Honey

    Finally, drizzle honey over the top of the fruit and yogurt, adjusting the amount to your taste.
