Gnocchi Preparation

    Boil Potatoes

    Peel and chop the potatoes into chunks. Boil them in a large pot of salted water until fork-tender, about 15-20 minutes.

    Mash Potatoes

    Drain the potatoes and allow them to cool slightly. Mash the potatoes until smooth and let them cool completely.

    Make Dough

    In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms. If the dough is too sticky, add a bit more flour.

    Form Gnocchi

    On a floured surface, divide the dough into smaller sections. Roll each section into a long rope, about ¾ inch thick. Cut the ropes into 1-inch pieces to form gnocchi.

    Shape Gnocchi

    Using a fork, gently press each gnocchi piece to create ridges. This will help hold the sauce.

    Cook Gnocchi

    Bring a large pot of salted water to a boil. Cook the gnocchi in batches until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.

    In a skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Cook Tomatoes

    Add the cherry tomatoes to the skillet. Cook until the tomatoes start to burst and become soft, about 5-7 minutes.

    Finish Sauce

    Add the fresh basil, salt, and black pepper to the skillet. Stir to combine and cook for another 2 minutes.

Assembly

    Combine Gnocchi and Sauce

    Combine the cooked gnocchi with the tomato basil sauce in the skillet. Toss gently to coat the gnocchi evenly.

    Serve the gnocchi topped with pieces of burrata cheese and extra basil leaves for garnish.
