Fried Calamari

Method

Prepare the Fried Calamari

    Make the Coating

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Mix well.

    Coat the Calamari

    Dredge the calamari rings in the flour mixture, making sure they are fully coated. Shake off any excess flour.

    Heat the Oil

    In a deep skillet or heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches, frying for 2-3 minutes or until golden brown and crispy.

    Drain and Keep Warm

    Using a slotted spoon, remove the fried calamari and drain on paper towels. Keep warm while you prepare the sauces.

Make the Marinara Sauce

    In a saucepan over medium heat, add olive oil and minced garlic. Sauté for about 1 minute until fragrant.

    Combine Tomatoes and Spices

    Add the canned crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir well to combine.

    Bring the sauce to a simmer, then reduce heat to low and let it cook for about 15-20 minutes, stirring occasionally.

    Stir in the chopped fresh basil before serving.

Prepare the Spicy Aioli

    In a bowl, combine mayonnaise, sriracha sauce, lemon juice, garlic powder, and salt to taste.

    Whisk the ingredients together until smooth and well combined.

    Adjust Seasoning

    Taste and adjust seasoning if necessary, adding more sriracha or salt as desired.
