Method

Preparation

  1. 1

    Prepare the Figs

Wash the fresh figs under cool running water to remove any dirt. Remove the stems and cut the figs into quarters.

  2. 2

    Combine Ingredients

In a large pot, combine the quartered figs, sugar, lemon juice, ground cinnamon, ground nutmeg, and pectin. Stir well to ensure that the figs are evenly coated with the sugar and spices.

Cooking

  1. 3

    Cook the Mixture

Place the pot on the stove over medium heat. Stir the mixture frequently until it comes to a gentle boil. Continue to boil the mixture for about 15-20 minutes, stirring often, until the figs are soft and the mixture thickens.

  2. 4

    Test for Consistency

To check if the preserve has reached the desired consistency, drop a spoonful onto a cold plate. If it thickens upon cooling, it is ready. If not, continue to boil for another 5 minutes.

Canning

  1. 5

    Prepare Jars

While the fig mixture is cooking, sterilize your canning jars and lids by placing them in boiling water for 10 minutes.

  2. 6

    Fill Jars

Once the fig preserve is ready, carefully ladle the hot mixture into the sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims of the jars with a clean cloth to remove any residue.

  3. 7

    Seal Jars

Place the sterilized lids on top of the jars and screw on the metal bands until they are fingertip-tight. Do not over-tighten.

  4. 8

    Process Jars

Process the jars in a boiling water bath for 10 minutes to ensure a proper seal. Remove from the water and let them cool completely on a clean towel.
