Making the Dough

Prepare the Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix the Dough
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let it Rise
Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Preparing the Eggplant

Slice the Eggplant
Cut the eggplant into 1/4-inch thick slices. Sprinkle salt on the slices and let them sit for 30 minutes to draw out moisture.

Rinse and Dry
Rinse the eggplant slices under cold water to remove excess salt, then pat them dry with paper towels.

Assembling the Pizza

Preheat the Oven
Preheat your oven to 475°F (245°C).

Roll Out the Dough
Once the dough has risen, punch it down and roll it out on a floured surface to your desired pizza shape and thickness.

Add Marinara Sauce
Spread the marinara sauce evenly over the rolled-out pizza dough, leaving a small border around the edges.

Layer the Cheeses and Eggplant
Sprinkle half of the mozzarella cheese over the marinara, followed by the fried eggplant slices. Top with the remaining mozzarella and Parmesan cheese.

Bake the Pizza
Place the pizza in the preheated oven and bake for 12-15 minutes until the crust is golden and the cheese is bubbly.

Remove the pizza from the oven and immediately sprinkle fresh basil leaves over the top.
