Prepare the Eggplant
Slice the eggplants into 1/2 inch thick rounds. Sprinkle both sides with salt and let sit for about 30 minutes to draw out moisture. Rinse and pat dry.

Cook the Ziti Pasta
In a large pot, bring salted water to a boil. Add the ziti pasta and cook according to package instructions until al dente. Drain and set aside.

Fry the Eggplant
In a large skillet, heat olive oil over medium heat. Add the eggplant slices and cook until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

Layer the Ingredients
In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom. Layer half of the fried eggplant slices, followed by half of the ziti pasta, half of the marinara sauce, half of the mozzarella cheese, and half of the Parmesan cheese. Repeat the layers with the remaining ingredients.

Bake the Dish
Preheat your oven to 375°F (190°C). Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

Serve
Let the eggplant parm cool for about 10 minutes before slicing. Serve warm, garnished with fresh basil if desired.
