    Preheat Oven

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

    Combine Wet Ingredients

    In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until well combined.

    Combine Mixtures

    Add the wet ingredients to the dry ingredients and mix until just combined. Carefully stir in the boiling water (the batter will be thin).

    Bake the Cake

    Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

    Cool the Cakes

    Once baked, let the cakes cool in the pans for 10 minutes, then remove from pans and cool completely on a wire rack.

Frosting Directions

    Make the Frosting

    In a medium bowl, beat the butter until creamy. Gradually add cocoa powder and powdered sugar, alternating with milk and vanilla extract, until you reach a spreadable consistency.

    Frost the Cake

    Once the cakes are completely cool, place one layer on a serving plate and spread a layer of frosting on top. Place the second layer on top and frost the top and sides of the cake.

    Chop the pistachios finely. Serve slices of the chocolate cake with a scoop of vanilla gelato on the side, and sprinkle chopped pistachios over the top for garnish.
