Method
Preparation
- 1
Prepare Chicken
Begin by placing the chicken breasts between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound them to an even thickness of about 1/2 inch. This helps them cook evenly.
- 2
Marinate Chicken
In a bowl, mix lemon juice, sea salt, black pepper, garlic powder, and paprika. Place the pounded chicken breasts in the marinade and let them sit for at least 30 minutes to absorb the flavors.
Breading
- 3
Set Up Breading Station
Prepare three shallow dishes: one with flour, one with beaten eggs, and one with bread crumbs. This will be your breading station.
- 4
Bread the Chicken
Take each marinated chicken breast and first coat it in flour, shaking off the excess. Next, dip it in the beaten eggs, allowing any excess to drip off. Finally, coat it in bread crumbs, pressing gently to adhere the crumbs.
Cooking
- 5
Heat Oil
In a large skillet, heat the olive oil over medium heat. Make sure the oil is hot enough that a breadcrumb sizzles when dropped in.
- 6
Cook Chicken Cutlets
Carefully place the breaded chicken cutlets in the skillet. Cook for about 4-5 minutes on each side or until golden brown and cooked through, reaching an internal temperature of 165°F (75°C).
- 7
Drain
Once cooked, transfer the chicken cutlets to a paper towel-lined plate to drain any excess oil.
Serving
- 8
Serve
Serve the chicken cutlets warm with a wedge of lemon on the side for an extra burst of flavor. Enjoy!
