1. Make the Dough

In a mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Add olive oil and gradually mix the flour into the eggs using a fork.

Once combined, transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

In a bowl, combine ricotta cheese, Parmesan cheese, mozzarella cheese, egg yolk, salt, black pepper, and fresh basil. Mix well until fully combined.

4. Roll Out Dough

After resting, divide the dough into four pieces. Roll out one piece into a thin sheet using a pasta machine or a rolling pin. Keep the remaining dough covered to prevent it from drying out.

5. Fill Ravioli

Place teaspoon-sized dollops of cheese filling along one side of the rolled-out dough, leaving space between each dollop. Fold the other side of the dough over the filling and press down to seal, ensuring there are no air pockets.

6. Cut Ravioli

Use a knife or a ravioli cutter to cut between the filled portions, creating individual ravioli. Press the edges with a fork to ensure they are sealed properly.
