Pasta Dough

Sauce (Optional)

Method

Pasta Dough Preparation

  1. 1

    Make the Dough

In a mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Add olive oil and gradually mix the flour into the eggs using a fork.

  2. 2

    Knead the Dough

Once combined, transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Cheese Filling Preparation

  1. 3

    Mix Cheese Filling

In a bowl, combine ricotta cheese, Parmesan cheese, mozzarella cheese, egg yolk, salt, black pepper, and fresh basil. Mix well until fully combined.

Ravioli Assembly

  1. 4

    Roll Out Dough

After resting, divide the dough into four pieces. Roll out one piece into a thin sheet using a pasta machine or a rolling pin. Keep the remaining dough covered to prevent it from drying out.

  2. 5

    Fill Ravioli

Place teaspoon-sized dollops of cheese filling along one side of the rolled-out dough, leaving space between each dollop. Fold the other side of the dough over the filling and press down to seal, ensuring there are no air pockets.

  3. 6

    Cut Ravioli

Use a knife or a ravioli cutter to cut between the filled portions, creating individual ravioli. Press the edges with a fork to ensure they are sealed properly.

Cooking the Ravioli

  1. 7

    Boil Water

Bring a large pot of salted water to a boil. Once boiling, gently add the ravioli to the water.

  2. 8

    Cook Ravioli

Cook the ravioli for about 3-4 minutes or until they float to the surface. Use a slotted spoon to remove them from the pot.

Sauce Preparation (Optional)

  1. 9

    Make the Sauce

In a pan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant. Then add crushed tomatoes, salt, black pepper, and chopped basil. Simmer for 10-15 minutes.

Serving

  1. 10

    Plate the Ravioli

Serve the cooked ravioli topped with the sauce (if using) and garnish with additional Parmesan cheese and fresh basil if desired.
