Method

Prepare the Pasta

    Boil Water

    In a large pot, bring salted water to a boil.

    Cook Cavatelli

    Add the cavatelli pasta to the boiling water and cook according to package instructions, usually about 8-10 minutes, until al dente.

    Reserve Pasta Water

    Before draining, reserve about 1 cup of pasta cooking water. Drain the pasta and set aside.

Cook Sausage and Greens

    Cook Sausage

    In a large skillet over medium heat, add the hot Italian sausage. Cook until browned and cooked through, breaking it up into pieces with a spoon, about 7-10 minutes.

    Prepare Broccoli Rabe

    While the sausage is cooking, wash and trim the broccoli rabe. Cut it into smaller pieces.

    Sauté Garlic

    Add the minced garlic to the skillet with the sausage and sauté for about 1 minute until fragrant.

    Add Broccoli Rabe

    Add the broccoli rabe to the skillet along with the olive oil and red pepper flakes. Sauté for about 5-7 minutes until the greens are tender.

Combine and Serve

    Mix Pasta and Sausage

    Add the drained cavatelli to the skillet with the sausage and broccoli rabe. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

    Season

    Season with black pepper to taste. Serve hot, drizzled with a bit more olive oil if desired.
