    Prepare the Dough

    In a large bowl, mix together flour, sugar, cocoa powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.

    Add Wet Ingredients

    Stir in the egg yolk, white wine or vinegar, and water until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Roll and Cut the Dough

    Roll out the dough to about 1/8 inch thick. Cut into circles (about 5 inches in diameter).

    Shape the Cannoli

    Wrap each circle around a cannoli tube, sealing the edges with a little water. Repeat with remaining dough.

    Fry the Shells

    Heat oil in a deep pan over medium heat. Fry the cannoli shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Nutella Filling

    Mix the Filling

    In a large bowl, combine the ricotta cheese, Nutella, powdered sugar, and vanilla extract. Mix until smooth and creamy.

    Fold in Whipped Cream

    If using, gently fold in the whipped cream to the Nutella mixture for a lighter texture.

    Fill the Cannoli

    Using a piping bag or a spoon, fill each cooled cannoli shell with the Nutella filling.

Garnish

    Garnish the Cannoli

    Sprinkle chocolate shavings over the filled cannoli and dust with powdered sugar before serving.
