Cook the Pancetta
In a skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Boil Water for Pasta
In a large pot, bring salted water to a boil. Add the cavatelli pasta and cook according to package instructions until al dente, usually about 3-5 minutes.

Prepare the Poached Eggs
In a separate pot, bring water to a simmer and add a splash of vinegar. Crack each egg into a small bowl, then gently slide it into the simmering water. Poach for about 3-4 minutes or until the whites are set but the yolks are still runny. Remove eggs with a slotted spoon and set aside.

Combine Ingredients
Once the pasta is cooked, drain it and return it to the pot. Add the crispy pancetta and mascarpone cheese. Stir until the mascarpone is melted and coats the pasta. Season with salt and black pepper to taste.

Serve
Divide the cavatelli mixture into bowls. Top each serving with a poached egg, a sprinkle of Parmesan cheese, and a dash of everything bagel seasoning. Serve immediately.
