Beef Stracotto

    Prepare the Beef

    In a large skillet, heat the olive oil over medium-high heat. Season the beef chuck roast with salt and black pepper. Brown the beef on all sides in the skillet (about 5-7 minutes).

    Sauté Aromatics

    Remove the beef from the skillet and set aside. In the same skillet, add the chopped onion and garlic. Sauté for about 3-4 minutes until the onion is translucent.

    Combine Ingredients

    Add the chopped carrots, red wine, beef broth, bay leaves, and thyme to the skillet. Stir well to combine.

    Braise the Beef

    Return the browned beef to the skillet. Bring the mixture to a gentle simmer. Cover and reduce the heat to low. Let it cook for about 3 hours or until the beef is tender and easily shreds.

    Final Seasoning

    After cooking, taste the sauce and adjust the seasoning with more salt and black pepper if needed. Remove bay leaves before serving.

Polenta

    Boil Water

    In a large pot, bring 4 cups of water to a boil. Add salt to taste.

    Cook Polenta

    Gradually whisk in 1 cup of polenta to the boiling water. Reduce the heat to low and continue to whisk until thickened (about 5-7 minutes).

    Add Cheese

    Remove from heat and stir in the grated Parmesan cheese until well combined and creamy.
