Pasta Preparation

    Cook the spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain the pasta

    Once cooked, reserve about 1 cup of the pasta water, then drain the spaghetti and set aside.

Sauce Preparation

    Sauté the onion

    In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté until it becomes translucent, about 5 minutes.

    Add the tomato sauce

    Pour in the tomato sauce and stir well. Allow it to simmer for about 5 minutes.

    Incorporate the cheese

    Add the scamorza cheese, allowing it to melt into the sauce while stirring. Once melted, mix in the crushed red pepper flakes and black pepper.

    Combine with pasta

    Add the drained spaghetti to the skillet and toss to combine with the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Serve

    Serve the Amatriciana hot, garnished with grated pecorino cheese on top.
