Preparation

Prepare the Chicken

Preheat your oven to 425°F (220°C). Pat the chicken dry with paper towels, then rub olive oil all over it. Season generously with salt, pepper, and fresh rosemary.

Prepare the Potatoes

Wash and cut the Yukon Gold potatoes into wedges. Boil them in salted water for about 10 minutes until slightly tender, then drain.

Blanch the Broccoli Rabe

In a separate pot, blanch the broccoli rabe in boiling water for 2-3 minutes until bright green. Drain and set aside.

Cooking

Cook the Chicken

In a large cast-iron skillet over medium-high heat, place the chicken skin-side down. Place a heavy oven-safe brick wrapped in foil on top of the chicken. Cook for about 15 minutes, then carefully flip the chicken and remove the brick.

Roast in the Oven

Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).

Prepare Pan Drippings

Remove the chicken from the skillet and let it rest. Add chicken broth and lemon juice to the drippings in the skillet, scraping up any brown bits. Heat over medium until slightly thickened.

Serve

Serve the chicken with the boiled potato wedges and blanched broccoli rabe. Drizzle the pan drippings over the chicken.
