Method
Prepare the Tomahawk Steak
Season the Steak
Generously season the Creekstone Farms Tomahawk Steak with kosher salt and freshly ground black pepper on both sides. Let it sit at room temperature for 30 minutes.
Prepare the Heirloom Beans
Cook the Beans
In a medium pot, combine the heirloom beans, water, garlic cloves, and bay leaf. Bring to a boil, then reduce heat and simmer for about 1-1.5 hours or until beans are tender.
Prepare the Grilled Onion au Gratin
Make the Gratin
In a baking dish, place the grilled onions. Pour heavy cream over the onions, and sprinkle generously with grated Gruyère cheese, salt, black pepper, and fresh thyme leaves.
Bake
Place the dish in a preheated oven at 375°F (190°C) for about 15-20 minutes, or until the cheese is bubbly and golden brown.
