Preparation

Prepare Clams

Clean the clams thoroughly under cold running water. Set aside.

Prepare Tomato Confit

Preheat the oven to 150°C (300°F). In a baking dish, combine cherry tomatoes, olive oil, garlic cloves, and a pinch of salt. Roast for about 1 hour, until the tomatoes are soft and bursting.

Prepare Vegetable Medley

In a pan, heat olive oil over medium heat. Add garlic scapes and baby squash, sautéing until tender. Season with salt and pepper.

Cooking Clams

Fry Clams

In a bowl, whisk together flour, cornstarch, salt, black pepper, and garlic powder. Dredge each clam in the mixture. In a heavy-bottomed pot, heat oil for frying. Fry the clams in batches until golden brown and crispy. Drain on paper towels.

Assembly

Plate the Dish

On a serving plate, arrange the fried clams, sautéed vegetable medley, and a generous spoonful of tomato confit. Serve hot.
