Preparing the Duck

Brining the Duck

In a large bowl, combine the duck legs with salt, black peppercorns, bay leaves, and crushed garlic. Cover and refrigerate for at least 12 hours.

Confit Duck

After brining, rinse the duck legs and place them in a pot. Cover with duck fat and cook on low heat for about 2 hours, until the meat is tender. Let cool, then transfer to jars and cover with fat.

Pickling Solution

In a saucepan, combine water, apple cider vinegar, salt, dill, crushed garlic, and red pepper flakes. Bring to a boil, then let cool.

Pickling the Cucumbers

Pack the cucumbers into sterilized jars and pour the cooled pickling solution over them. Seal and refrigerate for at least 48 hours before serving.

Mixing the Dough

In a large bowl, mix the sourdough starter, all-purpose flour, water, and salt until a shaggy dough forms. Let rest for 30 minutes.

Kneading

Knead the dough on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise for 4-6 hours.

Baking

Preheat the oven to 450°F (232°C). Shape the dough and place it in a Dutch oven. Bake for 30 minutes covered, then 15 minutes uncovered until golden brown.
