Method

Preparing the Fries

  1. 1

    Cutting the Potatoes

Wash the Russet potatoes thoroughly. Cut them into even strips, approximately 1/4 inch thick to ensure uniform cooking.

  2. 2

    Soaking the Potatoes

Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

  3. 3

    Drying the Potatoes

After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

  4. 4

    Heating the Oil

In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

  5. 5

    Frying the Potatoes

Carefully add the dried potato strips to the hot oil in batches. Fry until golden brown and crispy, about 4-5 minutes per batch. Use a slotted spoon to remove and drain on paper towels.

  6. 6

    Seasoning the Fries

While the fries are still hot, sprinkle with salt to taste.

Making the Truffle Sauce

  1. 7

    Mixing the Ingredients

In a bowl, combine mayonnaise, truffle oil, garlic powder, lemon juice, and black pepper. Stir well until all ingredients are thoroughly mixed.

  2. 8

    Adjusting Seasoning

Taste the sauce and adjust seasoning with more black pepper or lemon juice if desired.

Serving the Dish

  1. 9

    Plating the Fries

Once all fries are fried and seasoned, place them in a serving dish.

  2. 10

    Adding Garnish

Sprinkle chopped parsley and grated Parmesan cheese over the fries for added flavor and presentation.

  3. 11

    Serving with Sauce

Serve the fries hot with the truffle sauce on the side for dipping.
