Method

Brisket Preparation

  1. 1

    Season the Brisket

Rub the brisket with salt, black pepper, paprika, garlic powder, and onion powder. Make sure to cover all sides of the brisket evenly.

  2. 2

    Prepare for Smoking

Place the seasoned brisket in a smoker and smoke at 225°F (107°C) for about 6-8 hours, or until it reaches an internal temperature of 195°F (91°C).

  3. 3

    Rest the Brisket

Once the brisket is cooked, remove it from the smoker and let it rest for at least 30 minutes before cutting.

  4. 4

    Cube the Brisket

After resting, cube the brisket into 1-inch pieces for the burnt ends.

Burnt Ends Preparation

  1. 5

    Mix the Sauce

In a bowl, combine the BBQ sauce, honey, and Worcestershire sauce. Mix well.

  2. 6

    Coat the Cubes

Toss the cubed brisket pieces in the sauce mixture until fully coated.

  3. 7

    Return to Smoker

Place the coated brisket cubes back in the smoker for an additional 1-2 hours at 250°F (121°C) until they become caramelized.

Assembly of Melt

  1. 8

    Toast the Buns

Lightly toast the brioche buns on a grill or in a toaster until golden brown.

  2. 9

    Layer the Ingredients

On the bottom half of each bun, layer a generous amount of burnt ends, followed by slices of cheddar cheese and pickles.

  3. 10

    Melt the Cheese

Place the assembled buns under a broiler for 1-2 minutes, or until the cheese is melted and bubbly.

  4. 11

    Serve

Remove from the oven, place the top half of the bun on, and serve hot.
